100 Foot Diet Challenge Meal #2



Our second challenge meal wasn't much better than the first in terms of backyard content, but hey, I'm working on it!

Baked Zucchini Risotto with baked potatoes and a green salad (sorry no pic, the camera batteries died!).

Backyard:
Zucchini, eggplant, potatoes, greens (lettuce, mizuna, endive, spring onions), lemon juice



Local backyard farmer, organic:
Tomatoes

Aussie, organic:
Onion
Arborio rice
Olive oil

Aussie:
Parmesan cheese
Salt

Getting there! Need to plant more variety I think.

Hi Crazy Mumma,

I wish I was doing that well on homegrown produce.

Really the on things that you could possibly be growing that you had listed in other catagories were tomatoes and onion. If you ask me thats really good.

I want to tell you how much I enjoyed reading your conversions for the Riot. Like you we've cut down considerably and I like to know how we stand compared to others. I look forward to the food one.
