100 Foot Diet Challenge Meal #3



This week's Challenge meal was Eggplant and Potato lasagne served with a salad, adapted from this recipe (I'll post a pic when it's finished :-)

Ingredients

Backyard:
Eggplant
Potatoes
Garlic
Green Peppers
Salad leaves

Local, organic farmers:
Homemade (by me) pasta sauce using local, organic tomatoes
Cherry tomatoes

Aussie:
Mozarella Cheese
Wholemeal lasagne noodles
Salt

Imported:
Pepper

Have you ever made lasagne by hand? It's a bit of work but once you've made it you can freeze or dry the pasta for next time.

Ooh yum, yes I love home made pasta, I just get a bit lazy sometimes *blush*
