100 Foot Diet Meal

I've been very slack and haven't been posting my 100 Foot Diet Challenge meals for ages - a smack on the wrist for me! Anyway, this week's meal was sweet potato and ginger soup with homemade herb scones (Hint: Don't make the dough in the food processor, as you will end up with bright green scones ;-) .

Sweet potato and ginger soup.

Backyard (100 foot) ingredients:

sweet potato
fresh ginger
green onions
parsley, chives and coriander

Local:
flour
butter
milk

Australian:
white beans
salt

Imported:
pepper
curry powder (local and imported ingredients)

Herb scones
Would be a good addition to a meal on St. Patrick's Day I think ;-)


Sweet Potato and Ginger Soup:

* Cube 1kg of sweet potato, add to 1.2L of boiling water, reduce heat, cover and simmer for 15 minutes, until tender.
* Add one large knob of fresh ginger, finely sliced, half a 400g tin (or equivalent) of drained and rinsed white beans and one teaspoon of curry powder (or to taste). Puree in a blender or use a hand held mixer.
* Add remaining half a tin of white beans, season and heat gently. Serve sprinkled with chopped parsley or coriander leaves.

Great for staving off those winter chills :-)

Your scones are very cute. I think my kids would very much enjoy something so different.
