It's citrus season, yum! Around here, I am always looking for a quick lemon recipe, and this one is an absolute winner. It is also just as delicious using oranges or other citrus fruit; I pinched the recipe from a lovely lady on Aussies Living Simply, whose name I can't remember (sorry!).
If you think you can't cook from scratch because it takes too long,
you need to make this recipe! It is literally just a few minutes work to get it in the oven, and it tastes sooo good, your tastebuds (and family or guests) will thank you for it.
Lemon or Orange Citrus Cake
1 lemon or orange, halved and pips removed (don't peel it)
1.5 cups self-raising flour
1 cup sugar
180g melted butter
3 eggs
poppyseeds, about 1 tablespoon or to taste

* Add all ingedients to a food processor or blender. Blend on slow speed until combined and then process on high speed until citrus is finely blended.

* Pour batter into a greased cake tin, a 12-cup muffin pan, or lined patty cake pans.

* Bake at 180'C for 45 minutes for a cake, or 20-25 minutes for muffins or patty cakes, or until golden and a skewer poked into the centre comes out clean.

* Turn out onto a rack to cool, if you can wait that long ;-)
* Enjoy with a nice cup of tea before they all disappear!

I just made these for breakfast and they were delicious...yes half the batch is already gone and there's only 3 of us (and one is only 2yo)!!!
Reminds me of the summer I nannied and had to make lemon poppyseed bundt cake at least once a week. This is MUCH easer.
I made these with tangelos (because our tree is laden with them) - they were divine!
