Low Fat, Low Sugar Muesli Bars

My kids and I love this recipe, although it is not as crunchy as commercially-bought muesli bars. If you prefer a more crunchy bar, you could try either lightly toasting the rolled oats before mixing with the other ingredients, or returning the cooled, cut-up bars to a low oven, but watch carefully that the bars don't burn. Alternately, you could dry the cooled, cut bars further in a dehydrator.


Ingredients

2 cups rolled oats
6 crushed Weet Bix
1/2 cup sultanas
60g dried apricots, chopped
1 cup 100% orange juice
1/3 cup honey
2 egg whites

Method

1. Combine orange juice and honey in a small saucepan, and simmer over medium heat for around 10 minutes, until it thickens and forms a thin syrup.

2. Combine oats, Weet Bix, sultanas and apricots in a bowl. Add syrup and stir to combine. Add egg whites and mix.

3. Preheat oven to 180'C (350'F). Press mixture into a lined 18 x 28cm tin, and bake 20-25 minutes until golden.

4. Cool in tin, turn out and cut into bars. They will last for up to a week in an air-tight container.

This is such an easy recipe to make! I have been using it for a while since I found it on your recipe blog. I have varied it a little though - i use 1 whole egg, 2 cups of mixed dried fruit like the mix for christmas cakes which is on sale at the moment, and white sugar and water instead of the OJ which we never buy. My OH lives off them during the week when he is at work :)

Really, plain white sugar?? I think it's the orange/honey flavour that makes them so tasty? But hey, if he likes them, LOL.

Yup, plain white sugar. I still use the honey though. His favourite bits are all the pieces of fruit. MY favourite bit is how we are saving so much money and I know what is in them! He used to go through 3 packs of bought muesli bars a week so these are a fantastic alternative. Now if only I could find a substitute for Up&Go's and Red Eye energy drinks!!!

Hi Anon,
Weet Bix are a popular Aussie breakfast cereal bar made from wheat flakes pressed together. Since they are being crushed anyway, you could easily substitute wheat flakes or bran flakes? Hope that helps :-)

Hi Anon,
I'm all out of Weet Bix at the moment or I'd do it accurately for you, but I think it would be about 2 cups? Two wheat biscuits weigh 30g or 1 ounce, so six would be 90g or 3 ounces, if that helps you more :-)

I'm not a big fan of honey so is there anything I can substitute for it? Maple syrup perhaps? And are there any substitutes for the orange juice? It's not a big deal if there isn't, but I'm just wondering.

I just made these with my 17 moonth old daughter and had so much fun! I replaced the orange juice with 1 cup of apple and sultana puree (would work well with dates too), and used 1 whole egg and 1T oil. Came out beautifully. I had to add a little more sugar since the apples weren't as sweet as OJ syrup

Hi, I really want to make this recipe, but I'm living in france at the moment and can't find anything remotely similar to weetbix! Can you think of a substitute? Cornflakes, maybe?

I am looking forward to trying this recipe. Sounds delicious. However, my child hates honey. So, is it ok to substitute it with syrup?
I love the commercially made muesli bar with yogurt coating on the outside of the muesli bar. Would you know how to make it and how to corporate it into this recipe? Hope you or your readers can help.

I'm in the minority here, I know, but I did not like them. The taste and texture were almost unpalatable to me. My husband (who will eat about anything) isn't very keen on them either. I made two batches that are now going bad because no one in the house will eat them. Such a shame because I was really hoping they would work out.

Ive made these 4 times now and really like them. They are very different to store bought muesli bars but thats fine with me. I usually add nuts and or kapai puku mix and a couple of tablespoons of flax oil. So the recipe seems quite flexible.
I was surprised that my boyfriend enjoys them so much as he usually likes the full of sugar/covered in chocolate variety of baking :)
Just one question, could I use the whole eggs if I am not worried about the extra calories? I hate throwing the egg yolks out and dont have the patience to make custard.

I just made these VERY happy with the result!! I am constantly fed up with the amount of sugar in everything at the supermarket, this is a great snack and I love knowing exactly what is in it!
