Zucchini Slice

An oldie but a goldie, this one is a big favourite at my place, and it's so quick and easy. I always cook a double batch and freeze one for later.

Zucchini Slice

Ingredients

375g (3/4 pound) zucchini, grated
1 large onion, finely chopped
3 rashers bacon, chopped
1 red capsicum (sweet pepper), finely chopped
1 cup grated cheddar cheese
1 cup sifted self-raising flour
1/2 cup vegetable oil
4 eggs, lightly beaten
salt and pepper

Method

1. Mix all ingredients together well, and place in a greased baking dish.

2. Cook in a moderate oven (180'C/ 355'F) for 30-40 minutes, until cooked through and golden on top.

Serve hot with salad or rice, or freeze for up to three months.

Variation: Omit the bacon for a vegetarian version; add olives if desired.

This is a great recipe Julie. I can personally recommend this dish, as I have served it to my family twice and they all went back for seconds!

You can also do it with gluten free flour... We call it Vege Bake in our house! Freezes so well, in individual portions for lunch or dinner for one!

Hi Julie

I have one of these in the oven right now... only no bacon and I had mozzarella cheese that needed using up. I like the fact that it is so easy to add whatever you have on hand and leave out what you don't, except eggs I guess.

Anyway, it's smelling pretty good.

A popular recipe in our household too, which I make using spelt flour.

Great to see your blog mentioned in the current issue of 'Notebook' magazine, Julie. How lovely for you!

Cheers, Bronwyn.

This recipe has been a favourite in our house for many years. We make it without bacon and add carrot for colour and cover the top with slices of ripe tomato - yum! I'm going to have to make one (or two), it's been too long!

Hi guys,

I'm glad to hear that we're not the only ones still enjoying this 70's classic ;-)

Hey Dixiebelle, thanks for the tip :-)

Bronwyn, thanks for the heads up! Great article about Rich and Ally! Must try the slice with spelt flour now that I have some.

Hi Deb,
I hope your slice turned out :-)

Hi Holly,
I often make it with tomato on top too, especially if I've added olives, it's yum isn't it?

Cheers, Julie
