Hummus
My kids love hummus, they devour it whenever I serve it up for a snack. I pre-cook dried chickpeas and keep them in the freezer in portion-sized containers, ready to whizz this up quickly when required. Thaw the chickpeas first; a quick burst in the microwave will do it if you are really in a hurry.
Ingredients
400g can of chickpeas, drained (or equivalent soaked and cooked dried chickpeas)
1/4 cup lemon juice
2 tbs tahini (sesame seed paste)
3 tbs water
1 tsp ground cumin
1/2 tsp ground coriander
2 cloves garlic
salt and pepper
Method
1. Place all ingredients except the salt and pepper into a food processor and process until smooth. Add more lemon juice and/or water if necessary to make a smooth paste. Taste and add salt and pepper as desired.
2. Turn into a bowl and serve with vegetable sticks and/or crackers.

Mmmm yum, I love homemade hommus too! Your receipe is very similar to mine, except I usually add a bit of olive oil in there as well. I'm also one to just throw in a bit of this and a pour of that, rather than measure out ingredients - so each batch of hommus has a unique flavour!

Hommus is a favourite in our household as well. My daughter loves it so much she would literally eat it till she is sick if I let her. I make a batch up each week - its so quick and easy. Freezing the chickpeas is a great idea thanks. I'll definately give that a go.

Hmm, I don't know if it would freeze, but you could make up small batches at a time? It lasts well in the fridge (up to a week).
