Speaking of mushrooms...

Item: One used commercial mushroom compost tray.

Yield: 2.5 kilos (5.5 pounds)

Enjoyment: Priceless.

Aaahhh... I am so glad you were able to harvest some mushrooms, too! It's great fun! Maybe one day you'll find some wild mushrooms. :)

How does one keep mushrooms for future use? Or do you have to give bags of mushrooms to friends? Make pasta sauce and can it?

Christine, I saute sliced mushrooms in olive oil and butter, and then scoop them into muffin tins. Freeze, then remove the mushroom rounds and store them all in a big plastic bag in the freezer.

When you're making a soup, pizza, steak sauce, or whatever, just take one out and defrost it (or just drop it into your soup/stew). Beautiful!

Thanks, they've been delicious, although surely not as good as Kel and Veggie's wild-caught ones ;-)

Christine, I've been drying some with a dehydrator, which are terrific to add to soups and stews, and I will also be freezing some (a la Darren's comment), and will be pickling and/or marinating some in future also, to use on antipasto plates and on pizzas.

Hi Darren, thanks for the tip. I love them fresh that way but didn't realise you could freeze the leftovers, so that's great!

Gina from the herald contacted Gromore today to see if they were happy to be mentioned in a column on growing mushrooms - apparently not. Something about them not being able to guarantee the mushrooms being safe? I'm sure its just that they don't want us to be able to grow our own and not buy theirs!

I've just remembered I havn't answered your email re the next batch - off to do so now.

I freeze my basil like that when i don't have time to make pesto. Thanks for the tips. I guess it's time to buy a dehydrator, cuz I have some tomatoes to use up, too!
