Continental Flat-leaf Parsley

I started this challenge on January 5 - it is my aim to harvest at least one thing from my garden every day this year - and photograph it. If I can manage to pick 360 different varieties, then so much the better! This is 66/360.Cheers,

I love flat leaf parsely. These are two fo my favourite ways to use it:
Gremolata
This is a great, zesty way to jazz up BBQ meats, fish or salads too. Here is a basic recipe, just combine the following in a small bowl.
Finely chopped preserved lemon rind (1/8 to 1/4)
Finely chopped garlic (1 clove)
Chopped flat leaf parsley (or try some coriander/ basil too) (1/2 a bunch)
Chopped pistachio, walnut or pecans (about 1/2 a cup)
Finely chopped capers (optional)
Olive oil (about 1/4 cup)
Lemon or lime juice (juice of one lemon, or two limes)
DB's Lentil salad
In a large bowl, put some chopped or slivered toasted almonds (or toasted pine nuts), chopped spring onions, cucumber pieces, chopped cherry tomatoes, chopped flat leaf parsley, finely chopped preserved lemon, and mix well. Then add a drained, and gently rinsed, tin of brown lentils, or lentils you've cooked yourself. Make a dressing with orange or lemon juice, honey, olive oil, garlic and pour in... toss it all gently.
I am really enjoying seeing the photos each day. And parsley is so delicious - I eat it with everything. Sometimes I just have a parsley sandwich.

I love parsley too, there are very few things I cook which don't get at least parsley in them :-)
