Homemade Taco Seasoning Mix

I was making up a new batch of my taco seasoning mix this morning and realised I haven't shared it on the blog before, so although there are hundreds of variations already on the 'net, here is mine!  Please excuse the dark photos as it is overcast here today.

Herbs and spices lose their flavour rapidly once ground so I try to buy and store them as close to whole as possible, so I generally need to use a spice grinder when I make up this mix.  I dry my own garlic as whole cloves, chillies whole, onions as slices and oregano as whole leaves (all dried in a dehydrator).





I make up around four or fives times the quantity of mix in one go and store it in a small glass jar.  The chilli powder is a matter of personal taste - we like it really spicy but I can only get away with about 1 tsp in the mix before my youngest starts complaining.

If you prefer a thicker sauce, add 1 tsp of cornflour (cornstarch) to the mix as well.



Taco Seasoning Mix

Chilli powder to taste (I use 1 tsp for the kids, and 1 tbs for adults).
¼ tsp each garlic powder, onion powder, crushed red pepper flakes & dried oregano
½ tsp paprika
1½ tsp ground cumin
1 tsp sea salt
1 tsp ground black pepper

Combine all ingredients together and store in an airtight container for up to three months.

Makes the equivalent of one packet of commercial seasoning mix, for use on 500g (1 pound) of mince (ground beef).




Of course, this mix doesn't need to be restricted to tacos - use it to flavour burger patties or sprinkle it on grilled chicken, for example. Yum!

Yum! If you make up a 4x batch at once, what sort of quantity do you use when you make tacos? A couple of tablespoons for 500g for example?

Hi Claire,
It depends on how much chilli powder you use. If you use only 1 tsp of chilli powder, you would use 6 tsp of mix per batch: i.e. 1 tsp of chilli powder plus the 5 tsp that the rest of the mix adds up to. Does that make sense?

Homemade taco seasoning is the ONLY way to go!!! I made that once and we can't eat the store bought stuff anymore, it tastes too fake!! Yum, I'm going to try your mix next :)

I stopped buying Taco seasoning a while back,and have been experimenting with herbs and spices, but haven’t been happy with any of my mixes yet. Thank you.

What a coincidence. I was just looking up something similar a few days ago. There are so many recipes out there so wasn't sure which one to start with. I was wanting to make my Mum a jar of seasoning as a little gift. This has given me a starting point. Thanks.

Thanks :-) I think there are so many variations of this because everyone likes a bit more of this and a bit less of that, so they tweak it to their own taste.

Mandy - Yes the bought stuff tastes "metallic" to me now.

Tricia - I have tried this in the sun cooker and you might want to saute it with some onions or a little oil first before adding it to the rest of the mix. Toasting the spices brings out their full flavour - it will still taste OK if you don't but it won't have the depth of flavour as doing it on the stove.

Yum, I'll be making some up, I usually just add different spices and herbs but this will make it quick and I'll certainly be trying your suggestion on grilled chicken, maybe even marinate the chicken in a small amount of oil, lemon juice and seasoning mix.

I'm with Mandy, a friend gave us a taco mix recipe about a year ago and I struggle to eat the store bought one now. Our recipe is similar:
Cumin, Parika, garlic powder, onion powder, dried oregano and beef stock. I don't add chilli powder as we have young children.
I haven't made it up in a big batch though, good thinking Julie.

The nachos were delicious thanks Julie. Much better than any spice mix i'd come up with.

I read your response only now, so simply threw the mix in with the beans and other ingredients without sauteing first. It still worked well - and saved me having to wash an extra pot ;-)
