You use up heaps...</title><content type='html'>Have you tried zucchini fritters? You use up heaps of zucchini this way.&lt;BR/&gt;&lt;BR/&gt;Grate zucchinis. Add herbs/spices/seasoning of your choice. Maybe 1 egg. Maybe a sprinkling of flour. Cut mozzarella or feta into cubes and add. Mix. Shape into paddies and fry in the pan. Don't worry about oozing cheese.
